Moist Banana Muffins with 1 Small Overripe Banana and Leftover Yogurt

Do you have that one or two over-ripened bananas in your pantry which are not going to see the daylight in a day or two? And also some yogurt/curd in your refrigerator which has become sour?

I came up with this delicious muffin recipe when i was craving something lightly sweet and reached out to my dear refrigerator. Nope! Nothing sweet inside! I could just see some yogurt lying around. I hate when this happens! We all do right! We all love our refrigerator packed with food especially cakes or desserts 😉 which we can grab anytime! Yay!

I thought about some healthy eating and reached out to my fruit basket. Nope! Nothing but a black overripe banana that I could not eat as is. I did not want to throw it away as I do not believe in throwing food in the dustbin.


How I made Moist Banana Muffins with leftover yogurt and overripe banana

I first thought of just mixing them together to make a banana yogurt smoothie but then it dawned on me that I could make them into delicious banana muffins! Perfect for my idea of a snack as I’m always up for eating muffins or rather cake in any form 😀

So I thought of making these banana muffins with whatever I had in my pantry and success! These muffins are so moist, light and yummy that you cannot stop on one!

A yummy flavorful and moist banana yogurt muffin recipe to enjoy anytime
Recipe type: Appetizer
Serves: 8-9 medium sized muffins
  • 140 gm All Purpose Flour
  • ½ tsp Baking Soda
  • ⅛ tsp Salt
  • 100 gm Powdered Sugar
  • 120 gm Leftover Yogurt
  • 1 tsp Vanilla Essence
  • 30 ml Vegetable Oil
  • 1 overripe Banana (approximately 40 gm)
  • 1 tbsp Vinegar
  1. Preheat the oven at 180 degree Celsius for 15 minutes.
  2. Mash the banana with a fork and keep aside.
  3. Beat the yogurt, sugar and oil together with a hand whisk until they combine.
  4. Add the mashed banana and vanilla essence to it.
  5. Sieve the remaining dry ingredients and make a well in the center.
  6. Add the wet ingredients and combine until just mixed.
  7. Put in the vinegar at the very end and combine well.
  8. Fill the muffin liners till the ⅔rd mark and bake for 20 minutes at 170 degree Celsius.

Pro Ingredient Tips for Flavorful Banana Yogurt Muffins

These banana muffins are not overly sweet. You can increase the sugar to make them more sweet.

Whether you make these with leftover or freshly set yogurt, these will taste just the best.

Over-ripe Banana gives you the extra sweetness because of which you can afford putting less sugar. You can go ahead and use regular yellow bananas but you will require more sugar then. Just taste the batter before you fill the muffin liners. This recipe does not use eggs and is perfectly safe to lick before you bake! 😀

You could use banana flavored yogurt instead of regular yogurt for that extra banana punch! If you are a crazy banana lover, use Banana extract instead of Vanilla! Devour to your heart’s content!
